Cauliflower Pizza Base - LCHF

We had some really nice ingredients in the fridge while we were on summer holidays so we thought it would be good to try them all out together on pizza. Sticking to low carb we made cauliflower bases, they were so easy to make and tasted great!
All it involved was 1 whole cauliflower that had been food processed to a cous cous like texture cooked in water for about 5 minutes, drained really really well and all the water squeezed/soaked out, 2 eggs mixed through and half a cup of cheese.
Spread out on baking paper into 2 large bases or 4 small ones and bake at 200 degrees for 30 minutes.

Then just cover in whatever ingredients you want and cook.
It was a bit soggy and we had to eat it with knife and fork but thats ok, the next day the few pieces that were left over tasted great and could be eaten by hand.
